Vegan Chik'n Katsu Curry Bowl

INGREDIENTS

  • Alpha Foods Chik’n Burgers
  • 2 servings of rice
  • 1 Tbsp vegan butter
  • 3 green cardamom pods
  • 2 whole cloves
  • Salt to taste
  • Broccoli (steamed)
  • Green onion, thinly sliced
  • White sesame seeds
  • 1/3 cup Japanese curry paste
  • 3 cups water
  • 1/2 tbsp soy sauce
  • 1/2 tbsp rice vinegar
  • 1/4 tbsp toasted sesame oil
  • 1/2 tbsp sugar

DIRECTIONS

  1. For your tonkatsu curry sauce, in a saucepan over medium-low heat add your water, soy sauce, rice vinegar, toasted sesame oil, sugar, Japanese curry paste, and salt to taste. Whisk until everything is mixed through and cook over a low simmer for 5-10 minutes.
  2. For the rice, cook your rice according to the package instructions, but add in your vegan butter, and whole cardamom pods, cloves, and salt to taste before covering the pot with the lid. Allow to sit covered with the heat off for 15 minutes after finished cooking, then fluff with a fork.
  3. Cook your Alpha Foods Chik’n Burger in the oven according to package instructions.
  4. Place your rice in a small bowl, packed tightly, and flip into your serving bowl. Pour in some of your tonkatsu sauce on the bottom, slice up your crispy chik’n burger and place it on top. Garnish with green onions and sesame seeds and serve with steamed broccoli on the side.
