Vegan Chik'n Pasta Salad

Prep: 10 minutes | Serves 4

INGREDIENTS

  • 2 packages Alpha Foods Chik’n Strips
  • 2 cups of pasta
  • 1 cup green beans, canned
  • 1 cup corn, canned
  • ¾ cup peas and carrot mix
  • ¾ cup broccoli, fresh or frozen
  • ¾ cup okra, fresh or frozen
  • ½ cup chickpeas
  • ½ cup sliced olives
  • ½ cup tomatoes, sliced
  • ¼ cup vegan mayo
  • 3 tbsp capers
  • 1 tbsp lemon juice
  • ½ tbsp chives
  • ½ tbsp dill

DIRECTIONS

  1. Cook both Alpha Chik’n Strips and pasta (2 cups uncooked) according to package instructions, then set aside to cool.
  2. Add all ingredients to a large bowl & mix well.


No clucks in this chicken-free dish—enjoy!
