Vegan Patatas Bravas

INGREDIENTS

  • 4-5 large red potatoes, diced with skin on
  • 4 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Salt / pepper to taste
  • ½ tsp cayenne pepper
  • 2 cups red enchilada sauce
  • 1 ½ cans chipotle peppers in adobo
  • Juice of half a lime
  • Small handful of cilantro
  • 2 garlic cloves
  • ½ cup plain unsweetened vegan yogurt
  • 3 tbsp finely chopped cilantro
  • 1 wedge of lime juiced


Misc. Ingredients


  • Alpha Foods Tamales (we used Chik'n Verde!)
  • Pico de Gallo
  • Guacamole
  • Cilantro
  • Lime Wedges

DIRECTIONS

  1. Preheat your oven to 400°F
  2. Dice your potatoes, skin on, and in a large bowl toss with 4 tbsp olive oil, chili powder, cumin, salt / pepper to taste, and cayenne.
  3. Spread evenly on a baking sheet and bake for about 30 minutes or until the potatoes are fork tender & slightly browned. Flip frequently.
  4. For the sauce, blend your red enchilada sauce, & garlic cloves, with the chipotle peppers & adobo in the can. Add as many chipotle peppers to your desired spice level. Once blended, blend in your cilantro, salt to taste, and lime juice.
  5. When the potatoes are ready, add back to the bowl you initially tossed them in & add in some of your sauce. Toss to combine.
  6. Mix your yogurt, cilantro, lime juice, and salt to taste and drizzle over top of the potatoes.
  7. Cook your Alpha Tamale according to package instructions. Place on a plate with some of the patatas bravas, pico de gallo, guacamole, lime wedges and fresh cilantro, enjoy!

Prep: 15 minutes | Serves 4 INGREDIENTS Chik'n Filling 1 package (about 12 oz) Alpha Foods Homestyle Chik'n Strips 2 tablespoons olive oil 1 teaspoon chili powder 1/2 teaspoon cumin 1/2 teaspoon smoked paprika Salt and pepper to taste Juice of 1 lime Other 8 small corn tortillas 1 cup vegan cheese (your choice, but cheddar-style works well) 1 cup pico de gallo (store-bought or homemade) 1/2 cup vegan sour cream 1/4 cup chopped fresh cilantro 2-3 jalapenos, thinly sliced (adjust to your spice preference) DIRECTIONS Cook the Chik'n: In a skillet, heat 2 tablespoons of olive oil. Add the Alpha Foods Homestyle Chik'n Strips and season them with 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of smoked paprika, and a pinch of salt and pepper. Cook for 5-7 minutes until the chik'n strips turn golden brown, and then squeeze the juice of 1 lime over them. Warm the Tortillas: Briefly heat the small corn tortillas either in the microwave or on a skillet until they are warm and pliable. Assemble the Tacos: Place a portion of the cooked chik'n strips on each tortilla, followed by a sprinkle of vegan cheese, a spoonful of pico de gallo, and some thinly sliced jalapenos. Add Toppings: Drizzle vegan sour cream over the top and sprinkle chopped fresh cilantro for extra flavor.  This chicken-free meal doesn’t cluck around. Enjoy!
